Double R Ranch tenderloin pieces are random cut pieces of USDA Prime beef. These are the trimmings that remain when our master butchers hand-cut filet mignon. In-house, they’re lovingly referred to as “tips and tails” and are a special treat we use to make turn everyday meals like chili and stew into something luxurious.
Tenderloin pieces are sold by the pound and since there can be variation in size we recommend using this as an ingredient. If your dish requires larger, consistent sizes, we suggest trying our tenderloin medallions.
